Greek Quinoa Salad with Chicken


This salad was AMAZING!!!
 
 
Ingredients
  • 1 cup quinoa
  • 1 lb boneless chicken breast
  • 1 + 1/2 cups water
  • 1 cup chopped green/red/orange bell pepper
  • 1/3 cup crumbled feta cheese
  • 2-3 TBSP apple cider vinegar
  • salt and pepper, to taste
  • 1-2 TBSP fresh parsley
  • I added Cavender's All Purpose Greek Seasoning
  • TASTY EXTRAS:
  • Hummus
  • Pita wedges
  • Olives
  • Fresh tomatoes
  • Lemon wedges
  • Cucumbers
Instructions
  1. First rinse and drain your quinoa using a mesh strainer or sieve.
  2. Bring a medium saucepan to medium heat and lightly toast the quinoa to remove any excess water. Stir as it toasts for just a few minutes. This step is optional but really adds to the nuttiness and fluff factor of the quinoa!
  3. Next add your water, set burner to high, and bring to a boil.
  4. Once boiling, reduce heat to low and simmer, covered with the lid slightly ajar, for 12-13 minutes or until quinoa is fluffy and the liquid has been absorbed.
  5. While quinoa is cooking, cut up chicken breast into cubes and saute in saucepan until brown, add greek seasoning if desired, may use 1tsp of olive oil if you would like. 
  6. While the quinoa cooks, chop and prep the remaining ingredients and whisk together your dressing ingredients.
  7. Snag your now-fluffy quinoa from the pot and give it a little fluff with a fork.
  8. For a chilled salad, you can pop the quinoa in the fridge for a few minutes prior to adding your veggies or simply let it cool on the countertop for a few minutes for a room temperature quinoa bowl.
  9. Whisk together olive oil, apple cider vinegar, salt, and pepper. How easy was that!? Pour over your quinoa bowl and toss with a pair of forks or salad servers and dig. on. in.
  10. Add any additional salt and pepper to taste, if desired.

One Pan Summer Sizzler


One Pan Summer Sizzler

What you will need:

6-8 baby red potatoes
package of chicken sausage (I used turkey sausage)
1 large zucchini
1 large yellow onion
1-2 red or yellow bell peppers
salt
pepper
2 tbsp. olive oil (may need more depending on how your potatoes cook)
garlic powder or Flavor God Garlic Lovers to sprinkle on potatoes and at the end

What to do:

1.  Wash and cut ingredients
2.  Warm 2 tbsp. of olive oil in a large skillet and dump potatoes in, salt, pepper, and garlic spices
3.  Bring to a sizzle/boil--then reduce heat and cover for 20-25 minutes or until your potatoes are tender
4.  Remove potatoes from skillet
5.  Add sausage, onion, and bell pepper and sizzle for 5-6 minutes
6.  Add zucchini for a few minutes
7. Add potatoes back into skillet--salt, pepper, and sizzle for 2-3 minutes.
Serve and enjoy!

Serves 4

21 Day Fix Equivalents:  1 yellow, 1 red, 1 green, 2 spoons for oils.

Real Talk

Yesterday I went to drop my little one off at daycare, we do the same routine in the morning, and she really loves her daycare providers.  But for some reason that day, I handed her off to Suzann and she cried, she tried to grab back at me and I had to leave, I had to go to work, and it broke my heart.  I got in my car and I cried.  At that point I decided I am going to make this a successful business, I am going to do whatever I have to do to help as many people as I can and grow my business, so I can stay at home with my daughter. I want to be able to put her on the bus in 4-5 years and be home when she gets home from school, I want to be able to take her to her sports games and cheer her on.  I can and I will in 5 years have a successful business with Beach body!

People are constantly asking why I want to be a health and fitness coach, She is my why, I want to have a better life for her, I want her to know what is good and what is important, your health is important.

My baby

This is me a year ago, I was going into my 18th hour of labor, I was tired and exhausted, I wanted to give up, but I kept breathing and focused on having this baby.  Unfortunately, she had other plans and got stuck in my pelvis.  I wanted so bad to have a baby as naturally as possible, we had gone to natural birthing classes, but in the end, I had to do what was best for me and the baby, I got an epidural was able to relax and she came early the next day!  Its a day I will never forget and It has gone by so fast.  I feel like I blinked and she will be 1 tomorrow! 

Dinner meals


I have been trying a couple new recipes and kind of making them my own.  The ground turkey chili is just browned ground turkey, a can of low sodium hunts tomato sauce, 1 can of kidney beans and I followed a recipe on Pinterest for a homemade chili seasoning, it was very spicy but all in all it was a great meal.  The burger in a bowl was ground turkey and ground beef browned in a sauce pan, I put a little burger and fry seasoning I had on it and then added the pickles, cheese, tomato and lettuce.  Easy peasy!! 

Garden

I got some time on Friday to plant my garden, I am so excited to have fresh vegetables!  I spent a good 3-4 hours weeding and planting.  I can't wait to see everything grow!

I can and I will!

 
Today I woke up and was motivated, I listened to some PD (Personal Development) as to why it is important to take breaks throughout the day to let your mind relax.  I also listened to a Podcast that motivated me to get out of my comfort zone and go after what I want.  This podcast gave me tools on to how to make this Beach body business a successful one, and I really think I can do this!  I completed the 1st day of 21 day fix, I will officially start on June 13th, did well with eating, and drank lots of H20!
